Natalia Fitz.

Natalia is the proud heir of two rich family culinary traditions—one from the heart of central Mexico and the other from the Pacific region of Sinaloa. These influences don’t compete; they blend seamlessly, creating a tapestry of cherished food memories where family comes together to prepare, savor, and share traditional meals.

As an environmental scientist and consultant immersed in Mexico’s heritage, Natalia’s work on Casa Jacaranda Garden in Cuernavaca earned her a scholarship to the MAD Academy (founded by René Redzepi of Noma in Copenhagen) in recognition of her dedication to preserving Mexico's traditional foodways. Her approach is deeply rooted in history, gastronomy, culture, and sustainability—a continuous journey of research and learning that she embraces daily.

FAQs

  • Traveling from Mexico City to Cuernavaca is easy with two convenient options:

    Private Driver:
    We can share a list of trusted drivers. Reservations must be made at least one week in advance. Contact us to arrange this option.

    Minivan Service:
    For a more independent option, book tickets at pullman.mx. Choose “Royal Pedregal” (south Mexico City) as your departure point and “Cuernavaca Casino” as your destination.

    Both options take about 1 hour and 20 minutes.

  • Because we entertain visitors from around the world, our experiences are generally in English. Spanish-language sessions are available with advance notice.

  • When you book, please mention allergies or restrictions in the space provided. Note that Mexican cooking is especially varied and naturally gluten free.

  • Normally six or eight participants. At private events, we can accommodate fifteen, in a modified class environment. The new space includes a spectacular patio available for bigger groups. If you’re more than eight, drop a line at hola@casajacaranda.mx.
